Simple Low-Histamine Chicken & Rice Bowl

Ingredients (2 servings):
1 fresh chicken breast (not marinated or frozen for long)
1 cup white rice
1 small zucchini, sliced
1 small carrot, grated
2 tbsp olive oil
Salt to taste
Fresh parsley or chives (optional)
Method:
Rinse the rice and cook it according to package instructions.
In a pan, warm the olive oil and add sliced chicken breast. Cook on medium heat until golden and fully cooked through.
Add zucchini and carrot to the pan, stirring for 3–4 minutes until soft.
